About This Style

What These Profiles Represent

National Research Institute of Brewing criteria identify Daiginjo-shu at 50% rice polishing or less, while Junmai Daiginjo-shu uses rice and koji without added brewers alcohol at the same polishing threshold. These profiles cover Daiginjo-family products with that premium highly polished rice profile.
