What These Profiles Represent
Under current U.S. TTB labeling standards, bourbon whisky is a whisky type made from fermented mash of at least 51% corn, distilled at 160 proof or less, stored in charred new oak barrels at 125 proof or less, and bottled under the broader whisky class at not less than 40% ABV. The same rule says the word bourbon may not describe whisky or whisky-based spirits not distilled and aged in the United States.
Bourbon is not limited to Kentucky by federal identity rules, but Kentucky is a major production center. The Kentucky Distillers' Association states that Kentucky produces 95% of the world bourbon supply; this page uses that as production context, not consumer popularity.
